 I'm tired of being asked if have I ever eaten at Jiro or which sushi restaurant is the best in Tokyo. &nbsp;I will make it clear now. &nbsp;I have eaten at Jiro, which is not even close to the best sushi restaurant in Tokyo. &nbsp;He became this sushi god because of one lousy food critic, which led to all kinds of marketing for him including the documentary. &nbsp;Of course, there is a personal preference, but FOOD ME and many other foodies agree that Sushi Saito is the best sushi restaurant in Tokyo.  国内外の人からすきやばし次郎で食べたことがあるかもしくは東京で一番の鮨屋なのかとイヤと言うほど聞かれました。なので今回はっきりお答えしたいと思います。もちろんすきやばし次郎で食べたことがありますし、個人的な意見ですが、日本一どころか東京一の鮨屋ではないと思います。ある著名なインチキ料理評論家によって有名になりました。そして東京一の鮨屋が何処かと聞かれればFOOD ME及び多く食通は鮨さいとうが東京一と答えるでしょう。

 For lunch, you can order either 10 or 15 pieces of sushi without appetizers, but you can also order the dinner course, which starts out with some appetizers. &nbsp;Almost always, steamed abalone and boiled octopus is served. &nbsp;They are both juicy and tender with aroma exploding in your mouth.  ランチは10もしくは15貫のお鮨のみですが、おつまみ数品付きのディナーコースを頼むことも可能です。ディナーの場合は、お鮨の前に数品のつまみが提供され、煮アワビと煮ダコが提供されます。どちらも大変柔らかく、芳醇な海の香りが口の中で広がります。

 After some appetizers, chef Saito starts cutting the fish with his masterful technique. &nbsp;Once he cuts the fish with his amazing technique, he leaves the fish for awhile to bring it to room temperature. &nbsp;And when he finally combines it with the rice, it perfectly blends in your mouth.  つまみの後は、いよいよ斎藤さんの見事な切りつけが始まります。この切りつけがとても大事で、切った魚をしばらく置くことで室温に戻り、シャリと合わせて口の中に入れた時に完全に融合。

After some appetizers, chef Saito starts cutting the fish with his masterful technique.  Once he cuts the fish with his amazing technique, he leaves the fish for awhile to bring it to room temperature.  And when he finally combines it with the rice, it perfectly blends in your mouth.

つまみの後は、いよいよ斎藤さんの見事な切りつけが始まります。この切りつけがとても大事で、切った魚をしばらく置くことで室温に戻り、シャリと合わせて口の中に入れた時に完全に融合。

 Tuna just a few seconds marinated in their special soy sauce. &nbsp;Chef Saito perfectly brings out the sticky texture of the tuna and the taste is just elegant.  数秒だけ漬けたマグロのヅケ。赤身のネットリ感を完全に引き出し、上品なまでの漬け加減。

 Each piece of sushi is soft and fluffy. &nbsp;When you put it in your mouth, the rice just falls into pieces and when you bite on the fish, it just perfectly blends with the rice. &nbsp;Delicate and smooth. &nbsp;Simple but just amazingly delicious.  どのお鮨も口の中に入れた瞬間にほどけ、角のない味わい。そして噛むほどにシャリとネタの美味しさを感じ、繊細でデリケート。シンプルだが、とてつもなく美味しい。

どのお鮨も口の中に入れた瞬間にほどけ、角のない味わい。そして噛むほどにシャリとネタの美味しさを感じ、繊細でデリケート。シンプルだが、とてつもなく美味しい。

 He almost moves like a dancer when he is making the sushi. &nbsp;After putting a piece in front of you, he stares at it for a split second before making the next one. &nbsp;His concentration is something you won't find in many other sushi chefs.  まるでダンサーのように鮨を握る斎藤さん。そして鮨を置いた後にその一貫を見る視線が凄いこと。他の寿司職人ではなかなか見られないとてつもない集中力!

 This amazing meal ends with the best tamago I ever had. &nbsp;It's somewhere between a custard pudding and a fluffy sponge cake. &nbsp;If you ever get to dine at Sushi Saito, you will remember it for the rest of your life. &nbsp;For at least me, he is the sushi god of the east of Japan, and chef Amano of Tenzushi Zushi is of the west of Japan. &nbsp;And chef Amano who is 20 yrs older than chef Saito flies all the way to Tokyo from Kokura once a month to just eat at Sushi Saito and flies back as soon as he finishes. &nbsp;This says a lot about chef Saito.  鮨さいとうで食事が出来る機会があれば、生涯忘れることはないでしょう。個人的には東の鮨神が斎藤さんで、西の鮨神が天寿し京町店の天野さん。そんな西の神である天野さんが小倉から毎月一度斎藤さんのところへ鮨を食べに来ることが、斎藤さんの凄さを物語っている。
