 As far as I know, Torishiki is one of the top 3 restaurants which is difficult to make a reservation. On a day that I miraculously have a reservation, I'm dancing on the way there.  僕が知る限り、超予約困難な店のトップ3に入る「鳥しき」。奇跡的に予約が取れた日は、小躍りしながらお店に向かう。

As far as I know, Torishiki is one of the top 3 restaurants which is difficult to make a reservation. On a day that I miraculously have a reservation, I'm dancing on the way there.

僕が知る限り、超予約困難な店のトップ3に入る「鳥しき」。奇跡的に予約が取れた日は、小躍りしながらお店に向かう。

 Lightly grilled sasami (chicken breast) with wasabi. &nbsp;As you bite on it, umami explodes in your mouth. &nbsp;It's wildly, refined, and deep. &nbsp;This restaurant always takes you to another level of deliciousness.  ほんのり火が通ったささみをわさびで。噛むと口の中で広がる鳥のうまみ。ちゃんと鳥の味がして、野性的なのに、上品で、深くて、広がる。この店はいつも、別次元のうまさへ、連れて行ってくれる。

ほんのり火が通ったささみをわさびで。噛むと口の中で広がる鳥のうまみ。ちゃんと鳥の味がして、野性的なのに、上品で、深くて、広がる。この店はいつも、別次元のうまさへ、連れて行ってくれる。

 It's all about the grilling technique here. &nbsp;Controlling the fire, time on the grill and the final touches before serving it. There is no other word but perfect. &nbsp;The chef's extraordinary passion towards Yakitori creates this grill.  この店の凄さは、なんといっても「焼き」。その火加減の絶妙さ、焼き時間、焼き上がり、すべて完璧という言葉しか思いつかない。焼き鳥への、半端ない情熱が、この焼きをつくるのだと思う。

 Besides chicken they serve Uzura (quail egg), Ginnan (ginkgo nuts), Shishitoh (green pepper). &nbsp;A magical grill creates a miraculous taste. &nbsp;The outside is crispy, inside moisty and when you bite on it’s elastic. &nbsp;And the egg yolk. &nbsp;You won't find such Uzura at other restaurants  うずら、ぎんなん、ししとうなど、鳥以外も、魔法のような火加減で、奇跡的な味になる。そとがしっかり、しっとりしてて、食べるとぷりっと割れる。そして黄身が・・・。こんなうずら、他でなかなか食べられない。

うずら、ぎんなん、ししとうなど、鳥以外も、魔法のような火加減で、奇跡的な味になる。そとがしっかり、しっとりしてて、食べるとぷりっと割れる。そして黄身が・・・。こんなうずら、他でなかなか食べられない。

 My personal favorite at Torikishi is Teba (wings). &nbsp;Of course, the grilling is perfect but the umami of the meat around the bone, it's dangerously delicious. &nbsp;I usually enjoy squeezing lemon on Teba but I never have at Torishiki. &nbsp;It's just too good to.  個人的に、鳥しきのナンバーワンは、実は、手羽。塩加減、焼き加減はもちろん、骨の周りにある肉の旨味が・・・危ないぐらい美味しい。レモンはお好みだが、僕が絞ったことがない(なんかもったいない)

 You finish the meal with an Oyakodon (chicken and egg over rice). &nbsp;This egg is beyond good. &nbsp;If the person who originally created Oyakodon ate this, that person would probably be in tears thanking the chef for evolving it. &nbsp;If you still have room left, Yaki-Onigiri (grilled rice ball) is superb as well. &nbsp; OMG....what a wonderful meal it is here.  〆は、親子丼で。この玉子のうまそうなこと。親子丼を発明した人がこの親子丼がを食べたら、進化させてくれてありがとうと涙を流すと思う。このあと、お腹に余裕があれば焼きおにぎりも絶品。ああ・・・ごちそうさまでした。
